Method
- Prepare a waffle iron with non-stick spray and turn on medium-high heat.
- In a mixing bowl, whisk together the protein powder, flour and baking powder.
- In another bowl, whisk together the egg, milk, juice, zest and vegetable oil.
- Add the wet ingredients to the dry and whisk until smooth.
- Pour ¼ of the batter into the center of the iron and cook until golden brown, about 2-3 minutes.
- Repeat until you have used all the batter.
- While the waffles cook, place the heavy cream into a mixer and beat on high until stiff peaks form.
- Stir in the protein and zest until combined.
- Serve waffles with lemon cream and top with lemon cake bar crumbles.
