Stir fry is the perfect busy weeknight dinner. Quick and easy to prepare, you can use any combination of whatever protein or vegetables you have sitting in your refrigerator. This week, I whipped up a Brown Rice and Ground Turkey Stir Fry based on what I had on hand. You could just as easily use this method with chicken breast, ground pork, or even tofu!

How to Make Brown Rice and Ground Turkey Stir Fry

Adding chicken stock to bowl

Start your Brown Rice and Ground Turkey Stir Fry by making the sauce. First you’ll add chicken stock to a bowl.

Adding rice wine vinegar

Followed by soy sauce and rice wine vinegar.

Adding chili paste

Next you’ll add some chili garlic paste and hoisin sauce.

Corn starch slurry

Whisk it all together and slowly add the corn starch, then set aside.

Sauteing onion

Then, start the stir fry by adding the diced onion to a hot pan with some oil.

Breaking up ground turkey

Next, you’ll add the ground turkey and season with salt and pepper. While the turkey cooks, make sure you break it up so that it crumbles.

Freshly grating ginger

Then using a microplane or cheese grater, freshly grate in the garlic and ginger.

Adding broccoli to pan

Once the turkey is fully cooked, add the broccoli to the pan and season with some additional salt and pepper.

Adding sauce to stir fry

Add your sauce to the pan, cover with a lid, and simmer for about 5 minutes, or until broccoli is tender.

Serve over a bed of brown rice and garnish with scallions and sesame seeds.

Easy Substitutions

  • Swap the veggies. Instead of broccoli, try green beans, bok choy, or cabbage.
  • Replace the rice. Serve this stir fry with your favorite type of rice, or with chow mein or rice noodlles.

Brown Rice and Ground Turkey Stir Fry

Full of protein and fiber, this brown rice and turkey stir-fry is quick and easy to prepare.

Servings: 4

  • 1 medium onion (diced)
  • 1 pound ground turkey breast
  • 2 cloves garlic (grated)
  • 1 tablespoon ginger (grated)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup chicken broth (low sodium)
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon chili garlic paste
  • 1 tablespoon corn starch
  • 1 tablespoon hoisin sauce
  • 4 cups broccoli florets
  • ½ cup scallions (chopped)
  • Spray a large, deep pan with non-stick spray and heat over medium high.

  • Add onions and saute until tender, about 3-4 minutes.

  • Meanwhile, in a small bowl, whisk together broth, soy sauce, rice wine vinegar, chili garlic paste, corn starch and hoisin sauce. Set aside.

  • Add ground turkey breast, garlic, ginger, salt and pepper to pan with onions and cook for 5-7 minutes until turkey is browned. Use a wooden spoon to break up turkey breast.

  • When turkey is browned, add broccoli florets and chicken broth mixture. Bring to a boil then simmer with lid on for 5-6 minutes or until broccoli is tender. Garnish with scallions just before serving alongside brown rice prepared with green peas, sesame oil and scallions.

Prepare brown rice according to package directions and add ⅓ c frozen green peas and 1 tsp sesame oil towards end of cooking time. Garnish with scallions. *Nutritional information does not include rice*
