In honor of National Nutrition Month (that’s March!), I asked nutrition experts from around the country their favorite global flavor. Each day throughout the month of March, you will find a new flavor and recipe posted, giving you a different perspective and idea on how to incorporate different flavors from around the world.
Today, I am sharing my favorite ingredient, Greek yogurt.
People are always surprised when I tell them just how many ways you can use Greek yogurt when cooking and baking. It really is such a versatile ingredient and once I started getting the hang of using it in many of my dishes, it will become a staple in many of my dishes. Some of my favorite ways to use Greek yogurt is in pancakes, popsicles, parfaits, deviled eggs, and smoothies. I even love using a dollop of Greek yogurt to add some flavor to soups and chili.
One of my favorite ways to use it is in these Whole Grain Banana-Chocolate Chip Pancakes. I use it to replace buttermilk by combining Greek yogurt with a little milk. All my kids request these pancakes on their birthday and they now have a very special place in our family traditions.
As for a cultural connection, my family originates from Israel and thick yogurt has been on my breakfast table since I was a girl. Labne, which is a thick yogurt in Israel, was only available in vanilla and chocolate flavors when I was growing up. Once Greek yogurt became more popular in the U.S. it reminded me of my childhood and quickly became a favorite in my home. My first book, The Greek Yogurt Kitchen, is all about the versatility of Greek yogurt in the kitchen! Wow, how things have come full circle.
